The brain is pretty tricky. On the one hand it doesn't process "of" but it can process complete words from only a few letters. It's an amazing thing, the brain.

That's actually not a true statement. I'm not even sure how the suggestion started about our lack of brain use. I'm sure like most things there's a partial truth in it somewhere, and the facts got repeated out of context.
