On a budget?

Buy a big box of chicken leg quarters (preferably on sale is even cheaper) and separate em into freezer bags of 2 leg quarters in each bag...

Pull out a bag at a time and bake 2 pieces at a time in a pan from frozen for about 2 hours at 390° flipping occasionally and seasoning with your choice of rub or other ( just to get a little flavor in the chicken)...cook till it is about to fall off the bone..

Let it cool a smidge and pull the skin first then strip the meat in a plate cutting It to lengths of an inch or so then ripping it up in to small pieces (pay attention to removing small bones)then mash in your favorite BBQ Sauce and favorite seasoning to desired consistency (another easy way to find the small bones)and once cooled to just over room temp put it in a sealed container and in the fridge.....When ya feel like a sandwich just fork out some......2 really big leg quarters ends up making about 7-10 BBQ Chicken sammiches this way and is really good, tastes like expensive BBQ(not cheap chicken from a can).......and is AMAZINGLY inexpensive doing it this way.....
