Hubby's Potato Soup

My husband always made a great soup. This was a staple in our house during the cold winter and it was often a requested item when we were feeling under the weather.

Hubby's Potato Soup

4-5 potatoes peeled and sliced. Add 1/3 tsp. salt and boiled until tender with enough water to cover potatoes. Also just before potatoes are tender add one large onion sliced, 4 Tbs of margarine. Be sure to keep plenty of water on potatoes while simmering. When potatoes are tender add milk equal to the amount of water on potatoes. Simmer 15 mins after milk is added. Add salt and pepper to your taste and serve.

Note: Since potatoes were sliced they will break up in small pieces.

You may have seen on another thread, I'm kinda burnt out on potatoes lately, but this sounds like something I could work with. Humm, If ya tossed in about a half pound of precooked thick bacon that's been broken up into smaller pieces and toss that in there, it might be OMG. Oh yeah, I had a vision!

Might as well throw in some peas and carrots and make a meal out of it! :wink:

I like food... lately though, it almost seems if it taste good I need to spit it out according to the Dr. :lmao: That soup sounds great, might give it a go, thanks for sharing.
