Calibrating Speedo
My Speedo is quit a bit off around 70 and was wondering if there was a way I could calibrate it.

I don't believe that there is an adjustment.
Is it reading too high?
If so look and see if the little weight on the short side of the needle came off. I had that issue on my 87 1400. had to pry the ring holding the glass in and really screwed up the ring but the speedo worked correctly.

I can't seem to win the lottery. I think I have used up all of my good luck riding motorcycles.

Slow. Going 75 is showing on the Speedometer to be doing around 83. Is there something I can replace or is this just and issue with the bikes?

All my 800's read ~5mph slower than reality (GPS or my truck) at 65mph.
They read about 6mph slower above 70mph.
Keeps you honest, and lucky....if it read 75 while really doing 83, I would have a boatload of speeding tickets.
